Hemp is Good Food

It took Americans more than a decade to get comfortable with soy products appearing at their tables, but another Asian staple may soon be turning a few western heads all over again.

Hemp - not to be confused with the cannabis or marijuana plant - has been widely cultivated in much of the world for at least 5,000 years, particularly in Asian countries, where it is grown as a food staple and as an export crop for a variety of other purposes. Oil and fiber made from hemp is found in many food, household and cosmetic products, including nut butters, cooking oils, cereals, pretzels, cookies, chocolate and "veggie" cheese and burger alternatives, soap, shampoo, lip balm and skin conditioner, cloth, ropes and paper.  Would you believe that hemp is also found in Armani designer clothing and BMW automobiles?

Nutritionally speaking, hemp has a great deal to offer!  Consider the following:

- Hempseed cotains 31% protein, specifically, edestin protein, a protein that contains all 8 amino acids.  Only soy comes close to offering as much protein.

- Hemp is an abundant source of essential fatty acids (EFAs), with a 100-gram serving of hempseed oil offering more than 36 grams of EFAs.

- Hemp is also rich in gamma linoleic acid (GLA), a substance that reduces LDL cholesterol.

Hemp products have an earthy flavor that resembles macadamia nuts.  Make sure you try the recipes in this month's newsletter!

Herbal Profile...

Elderberry (Sambucus nigra)

Common Names: Bore Tree

History:  A fragrant flowering tree, Elder gets its name form the Anglo-Saxon word aeld to mean "fire." The soft pith of young elder branches is easily removed, leaving a hollow tube or pipe. Presumably, these tubes were once used to blow on a fire in order to encourage the flames. But these pipes were also representative of early toys and musical instruments still popular today - pop-guns, flutes and whistles. Culpepper referenced the familiarity of elder when he wrote, "It is needless to write any description of this [Elder], since every boy that plays with a pop-gun will not mistake another tree for the Elder."

Elder wood has long been revered for its quality and strength. The tree is also graced with mystical powers and many ancient superstitions are associated with it. Judas reputedly repented his traitorous acts by hanging from an elder. The Dutch believed that elder trees were home to Hylde-Moer, or the Elder Mother, who hid among the branches. It was considered unwise to cut the wood of elder without first securing permission from Hylde-Moer. To do so would result in the tree spirit haunting whatever object the wood was obtained to make, as well as the humans that harbored it. There is also a persistent belief that the Cross of Calvary was made of elder, as an old rhyme relates:

Bour tree-Bour tree: crooked rong
Never straight and never strong;
Ever bush and never tree
Since our Lord was nailed on thee."

Medicinally, elder has been used for bruises, purging, to deter insects, as an eye wash and to treat colds and flu for centuries. Of these applications, the last holds particularly veritable promise. In fact, elderberry is one of the most important remedies to be found in your medicine chest when it comes to beating the sniffles.

In the 1980s, virologist Madeline Mumcuoglu, Ph.D., set out to determine by what mechanism elderberry successfully defeats the flu. She found that the action of elderberry extract was to prevent viral hemagglutinin, or the process of the invading cells using their spike-like projections to introduce its enzyme into healthy cell membranes. She further noted that the viral enzyme is also neutralized in the presence of elderberry extract.

Constituents: rutin and quercertin (flavonoids), vitamin C, anthocyanins

Help Your Fellow Americans!

The average unemployment rate among those living on Native American reservations is typically more than 50%.  Food is scarce since the land that these wonderful people have been forced to live on is one of the worst areas in the U.S. to support crops.  But just 11 pennies will feed one healthful meal to a Native American.  Won't you help?

Grape Juice May Promote Heart Health

In the first clinical study of its kind, scientists from the University of Wisconsin-Madison found that purple grape juice (Vitis labrusca L., Vitaceae) positively affects patients with coronary artery disease.  In the study, 12 men and three women of an average age of 63 years consumed approximately 21 ounces of purple grape juice each day for two weeks.  At that time, it was discovered that the subjects experienced lower LDL cholesterol levels and increased vasodilation, where the blood vessels relax.

Although this was a small study, the results lead researchers to support the promotion of flavonoid rich foods to combat heart disease.  Quercetin, catechins, myricetin, kaempferol and tannic acid are some of the most important flavonoids found in purple grape juice and offer health benefits similar to those derived from moderately drinking red wine.
